Everyone has their own cheesecake favourite. This is mine. It’s my own version of a recipe I found more than 20 years ago in the Jerusalem Post; the largest english language newspaper in Israel. Since then, this cake is regularly to be found on our table. It’s soft, creamy and light, with a touch of vanilla and a hint of lemon.
